Congrats on winning the cup. It is nice to see the team that deserves it the most to come out on top. Our AHL team here just missed playing of the Calder Cup and we love hockey. I myself am getting out of the wrenched business, but to answer your question, cutting prices isn't the answer. Our costs are the same or more everyday. Why would we, or how can we afford to cut. Watching and controlling expensed and maybe trimming the excess stuff can help, but I haven't seen lower fuel or insurance costs lately. Terminology is not always the same everywhere, but if by flow control you mean flow checks, the answer is yes you can. If the boiler and all the controls are above the slab and the piping drops, gravity flow will be minimal. Why not use circulators with internal checks.....talk about simplifying the piping!!! I have done 3-4 in my career, mostly on gas believe it or not....and on water. If you use UL approved fittings and install to manufacturers instructions, you should be OK. However, your concerns are real and hot taps, in my book, should be used only as a last resort. Nothing beats a solid threaded, welded or glued joint for strength and rigidity.
